I have been decorating cakes since 1986 and happened upon this career quite by accident. I took a simple cake decorating class with a friend and discovered a hidden talent! My first cakes were for family and friends and word began to spread until I found myself working for a caterer making wedding cakes, which by the way, I vowed never to do. I thought it was great fun drawing cartoon characters on birthday cakes and thought wedding cakes would be too scary. One cousin and one niece later I was on my way gaining confidence in the art of wedding cake decorating and construction.

Wedding Cakes with White Icing, 1840

The wedding cake first appeared in the late 1700s at aristocrats’ wedding ceremonies, according to “Wedding Cakes and Cultural History.” However, in 1840 Queen Victoria of England designed the wedding cake still seen today, a multi-layered cake with white icing. Originally, the whiteness of the wedding cake’s icing revealed the amount, quality and ultimately, expense, of sugar used. Use of pounds of sugar for cake topping signaled wealth.

Around late 17th century, to check the status of the wedding cake, we are treated to more interesting facts. During this period the wedding cake came to be known as the bride’s pie or cake. The bride’s pie or cakes were merely mince pies made of sugary sweet breads. A glass ring was hidden in these pies during the preparation. A belief then was that the lucky female at the wedding gathering to find the ring in the cake would be the next one to wed.

The History of Decorated Cakes

Cake decorating originated in 17th century Europe. During the 1840s, the advent of temperature-controlled ovens and the production of baking powder made baking cakes much easier. As temperature control technology improved, an increased emphasis on presentation and ornamentation developed. Cakes began to take on decorative shapes, were adorned with additional icing formed into patterns and flowers, and food coloring was used to accent frosting or layers of cake. Cake decorating was rumored to be started by a French bakery in the 1840s where a French baker wanted to increase the prices of the cakes and hence thought to decorate it.
